whole30 FODMAPs Day 3 is Complete!

My day got off to an interesting start. At 2:15 am I woke up in a panic, because I had a dream that I was heating olive oil in a frying pan over the stove, and that I forgot about it and so it was going to burn the whole house down. When I awoke, I realized it was the middle of the night and that no olive oil was currently cooking on the stove. It reminded me of a dream I had a few months ago when I awoke in a panic because I thought I had ate baked beans and corn. Wow. “You know you’re Paleo when…”

I eventually went back to sleep after the panic wore off, and finally got up at 8:30. I was really hungry so I had my egg whites, ground turkey, and zucchini noodle breakfast bowl, because quite frankly, everything tastes better in a bowl, as well as half a red grapefruit. I then went to run some errands. I purchased the probiotic VSL#3, because I heard it has done wonders for some people’s IBS and other GI disorders’ symptoms. I’m trying to decide if I want to start using it right away, or stick strictly to my Paleo FODMAPS diet to see if that has any healing powers…

Once I got home I was hungry, so I had lunch at 11:30 am or so. It was heated up leftovers from the night before, so that yummy crockpot chicken and veggies. It was just as delicious as last night. My family and I then headed to the pool, where I stayed until about 4:00 pm. I enjoyed my time by drinking iced unsweet black tea and water, listening to music, surfing the internet,  texting, staying up to date on Facebook, Instagram and Snapchat, as well as swimming and reading Life of Pi, all why simultaneously getting a nice tan. I also did some 4 x10 leg presses at 100 lbs. and my legs were shaking towards the end.

While laying at the pool, I became super bloated and a slight stomach ache began. It worsened as time went by and so by the time 5:00 pm rolled around when my brother, dad, and I wanted to play some croquet, my intestines were gurgling and I was hunched over all crampy. The croquet game went really well, but my dad ended up winning. We returned to the house after one round though because it was just so hot out. I jumped in the shower, and then the worst of my stomach pain started.

So, as I type, I am currently laying down on my bed in crippling pain, feeling bloated, gassy, and weak with a little nauseas because I haven’t ate since lunch. I know I should eat something, but I don’t think I can stomach it- as I like to say “I have an alien baby trying to rip out of my stomach.” The stomach pain may worsen if I eat.

I drank a can of coconut water and licked some salt off my hand to reduce the lightheadedness and nausea I feel, so hopefully I’ll wake up feeling better. I’m not supposed to consume coconut products on low FODMAPs, but I needed the nutrients and electrolytes; I was hoping coconut water would react in my body a little but differently than coconut flour or coconut flakes would.

I can’t wait to see a holistic doctor in 2 weeks. August 7th can’t come fast enough, because hopefully she’ll figure out what’s going on and how to treat it. Until then, pray for me and pray that the holistic doctor has the experience, wisdom, and knowledge to diagnose my issues and come up with a suitable treatment.


Motivated but not doing well…

Well, I just finished day 2 of my whole30 FODMAPS journey and unfortunately, I do not feel well. My stomach is bloated, achy, and crampy. Wonderful.

My day started out at the doctor’s office with a fasting blood pressure appointment. After my fasting results, I had to eat something, and then get retested to see if my blood pressure changes with food. I planned ahead, of course, and brought my breakfast with me in a lunchbox. For breakfast, I typically have egg whites, cooked ground turkey meat, and some sort of heated up vegetable, but I knew that I couldn’t bring that with me to the doctor because it’d get cold and then taste gross. So, in light of my ever-changing Paleo taste buds I had my lunch for breakfast at about 9:00 am. Yes, it’s true, I had a cold chicken breast with some raw green beans. And let me tell you- vegetables and meat are good anytime of the day. Pre-Paleo I could never have imagined doing something like that- it was wrong! Breakfast food is for breakfast and lunch food is for lunch and dinner food is for dinner. Unless, you had the occasional breakfast food for dinner, but not the other way around!

After my blood pressure got tested again, I headed home. My food was sitting well in my stomach and I felt fine. I also finally got rid of the last of that chicken broth cooked chicken. Then at about 12:30 pm I was feeling a little hungry and decided to have my breakfast food for lunch. It was my egg whites, ground turkey, and some zucchini noodles sautéed with lemon juice, salt and pepper, and mixed herbs. I assumed the mixed herbs were onion and garlic free…

Anyways, I felt fine and comfortably satieted. My mom, brother, and I headed to the pool where I went to the gym really quick and did some 4 x 10 leg presses at 100 lbs., and then ordered an unsweet iced black tea. I also drank water with fresh lemon. Then, over the course of an hour or so I developed a stomach ache. Nothing major, but I was definitely bloated and uncomfortable. The stomach aches got worse and lasted me till about 6:00 pm.

While there, I started researching Paleo FODMAPS approved recipes but it seems most of them still include nuts/seeds which I am not eating for the next 30 days. I looked on Instagram too. Speaking of which, today @theurbanposer, one of my favorite Paleo bloggers and Instagramers, asked to “follow” me on Instagram. I kind of freaked out a little, texted my mom about it, and then took a screen-shot of the request and Instagramed it. Yeah, I was excited.

While researching it dawned on me that sweet potatoes are a “Be Careful” food, which was super disappointing because this restaurant where I’m at this summer has sweet potato fries cooked in duck fat. Talk about nom nom paleo. I also tried to read about the GAPS diet, but I couldn’t find too much information on it. Anyone know anything about it?

Around 6:00 pm my stomach aches started to subside, but soon it was time for dinner. Although I wasn’t too hungry, I decided to eat slowly and see if I could manage anything. My mom being the wonderful, supportive person she is made a Paleo, but also FODMAPS approved meal. It was chicken breasts, with zucchini, parsnips, carrots, tomatoes and basil slow-cooked in a crockpot with water instead of broth, mixed herbs, salt and pepper. It was delicious and tasted like a pot-roast. She almost put asparagus in, but I told her it wasn’t FODMAPS friendly and she happily obliged to forgo it. I told her she could still put it in, and I’d just eat around it, but she thought the juices from the asparagus may still give me problems.

Smart woman she is.

I was able to eat a full chicken breast and lots of delicious veggies, but then the stomach pain started.

So, as I write this, I have a horrible stomach ache; I’m cramp, gassy, bloated, and uncomfortable. I avoided FODMAPS all day and I’m still not doing well. I know that it takes 1-6 weeks to see progress, but I sure hope it’s sooner than later. Regardless, I’m going to stick to it for 30 days, because I’ve never felt so motivated about a whole30. I’m ready for change and healing, and this blog is keeping me accountable. I look forward to sharing about my day and insight each night.

I’m wishing and praying that each day my gut heals and my symptoms subside, because I really miss my normal, active life.

Day 1 is Complete!

Well, Day 1 of my whole30 FODMAPS is over and needless to say it was quite an interesting day. I woke up with zero hunger, and so I didn’t get around to eating until about 4:00 pm. Yes- I said 4:00 pm. I ended up eating a heated up chicken breast, one and a half raw carrots, and some honeydew melon. I didn’t want to eat the chicken, because it had been cooked in chicken broth- which contains onions; but, I didn’t want the chicken to go to waste. I have one more chicken breast left to eat tomorrow and I’ll be in the clear!

So, I also found out while making my breakfast/lunch/dinner combo that my beloved Trader Joe’s Everyday Seasoning has onion in it. Why Trader Joe’s? Why? Do people seriously have to put onion and garlic in everything? I had no idea how much FODMAPS I was eating unknowingly (well, in my defense, it never mattered before).

While researching FODMAPS, I came upon a few controversies over some foods. It Starts with Food whole30 FODMAPS list has included on their whole30 FODMAPS rendition that nuts, seeds and coconut products are okay. However, on other Paleo FODMAPS lists, such as the Paleo Dietician, I saw to “Be Careful” or “Avoid” some vegetables and fruits, as well as the above items that It Starts with Food says it’s otherwise okay to consume. My mom and I agreed that for the sake of this 30 day experiment to exclude any fruit, vegetable, or food item that other lists say to avoid or even be careful with. So goodbye avocados, coconut and its products, nuts/seeds and their products, to name a few. I was never a huge coconut or nuts person, so no true loss there, but my avocados! How I love and will miss you.

With that being said, a question I pose is: where do I get my fat? Lots of olive oil I suppose?

I’ve also read that because fats are so limited on the Paleo FODMAPS plan that many people do better on a higher carb diet as a result. So more fruits and starches for me.

Anyways, I’m still recovering from eating earlier (a.k.a. my stomach ache is still present), but I have to remember that it takes a long time to reset your body systems and hopefully as the days progress I will see less bloat and stomach aches. Pray I see progress!

Why My Journey Begins

I’ve always wanted to start a blog, but I was never sure if anyone would actually read it or care what I had to say about food and nutrition.

You see, I love learning about food and nutrition and back in January of 2013 I embarked on a Paleo lifestyle. Previously, I had enjoyed the SAD diet, and then turned to a vegan diet after reading many books such as, Eat to Live. However, I couldn’t sustain a meatless lifestyle anymore, because I was a carnivore at heart, and after a lot of research I realized that these Paleo/Primal followers were on to something. My transition into a Paleo diet was not fast, and it took me about 2 months to become full Paleo, and like any new thing, I was extremely excited about discovering new recipes and hearing about how a low carbohydrate/moderate fat/high protein diet had done wonders for body composition, acne, and GI issues.

I didn’t begin my Paleo diet doing a whole30, so I did enjoy my Paleo treats. It began extremely well: my acne cleared up, I had wonderful energy, and more. However, about 2 months into my journey, in the month of March, I started experiencing extreme abdominal discomfort and pain, as well as gas and bloating. About 2 years previous I was diagnosed with IBS-C but with the help of medication, my body soon returned to a normal function and 6 months later I thought I was cured and so I went off the meds. But my relief was short lived and the symptoms came back. I visited my GI doctor but I was prescribed the same medicine, and since I followed such a strict Paleo diet he didn’t think it has anything to do with diet.

I now believe he is wrong.

In the course of 3 months I went from being an active collegiate cross country athlete to a couch potato because of chronic stomach aches who can’t seem to overcome her issues to be able to physically exercise at all. And now my summer days have been spent lying in bed or on a couch bloated and in pain.

Attempting to relieve my pain, I tried everything. I eliminated nuts/seeds. I eliminated high fructose fruits. I eliminated avocados. Nothing seemed to work. It seemed no matter what I ate it was a constant guessing game of whether or not my body would react by ripping my insides apart (figuratively of course). I even attempted doing strict Paleo whole30 but my symptoms never subsided and so I’d give up.

I’ve been so confused. I thought the Paleo diet was supposed to stop issues like this from happening, but it’s been the opposite. The stricter I am, the worse it gets. I love it and don’t want to give it up… but seriously- why isn’t it working properly?

That’s when I read about the FODMAPS diet. I was astounded. All of my go-to and favorite Paleo foods were on the “Foods to Avoid” list. Was this the answer? Were my favorite foods causing all of my problems? Could I not digest certain foods properly? As I  mentioned before, I attempted to restrict foods but never all of them at once and never for a long duration, but this time will be different. Many Paleo eaters had GI issues and turned to stricter version of the diet in the form of FODMAPS and found relief!

And that is what leads me to creating this blog: I’m going to find out what a FODMAPS diet can do for me. For the next 30 days, July 23 to August 21, 2013 I will be embarking on a strict Paleo/FODMAPS diet in the hopes of healing my GI distress holistically.

I wanted to write a blog to keep me accountable and keep track of my progress day to day. If you’re reading this and have any insight or recipes, I’d love to read your comments.
